Of course these babies aren't only delectable, they're also good for you!

Strawberry Lemon Chia Protein Muffins
Wet Ingredients: 1.5 tsp lemon juice, 1 tsp Lemon Zest, 1 Cup Strawberries, 2 Large Eggs, 1 Cup Roll Fresh Almond Milk, 1/4-1/2 Cup Greek Yogurt ( I used Fage 0% plain)
Dry Ingredients: 1.5 Cup Oatmeal, 1/2 Cup Whole Wheat or Coconut Flour (you choose), 2 scoops Protein Powder (I used Quest Vanilla, made for baking), 2 TBS Chia//Flax Seeds
Preheat oven to 350. Spray muffin tin with oil (I used coconut). Mix together eggs, almond milk, greek yogurt, & lemon until combined. Add the dry ingredients one at a time, mixing well after each ingredient. Fold in Strawberries.
*If the mixture is too thick add Almond Milk 1 tsp at a time, Too watery? Add Oatmeal.
Bake 10-15 minutes until golden brown

Cinnamon & raisin walnut, Blueberry Pecan Vanilla, Lemon Poppy Seed, Chocolate/Chocolate Chip (Chocolate Protein Powder, 1 TBS cocoa powder & 3 TBS sugar)
